Fruit jam making in Kenya: Customers and Market Demand

The buyer and the buying decision

Households, bakeries and small accommodation kitchens. The offer to test is: Make fruit jam in an identified fruit flavour and pack size.

Choose one jam flavour for a defined breakfast, baking or gifting application, validating the exact recipe and packaging before treating seasonal fruit substitutions as equivalent products.

Separate interest from an accepted order

Validate the recipe and packaging before taste-testing a small batch.

The purpose of this test is to establish whether the buyer accepts the specified result, delivery arrangement and payment terms. An encouraging interview does not establish repeat demand. Ask what the buyer currently uses, what would make them change supplier and who has authority to approve the first order. Record a refusal as carefully as an enquiry so that unsuccessful offers do not disappear from the evidence.

Collect evidence specific to this offer

Record fruit source, approved recipe, packed yield and customer application feedback, treating another fruit or package as a genuine process decision rather than a label change.

Question to resolveEvidence to retain
What exactly will the buyer accept?Have buyers use a properly produced sample and assess spreadability, fruit character and jar convenience, distinguishing preference from competent validation of recipe and storage conditions.
What is included in the first trial?Choose one jam flavour for a defined breakfast, baking or gifting application, validating the exact recipe and packaging before treating seasonal fruit substitutions as equivalent products.
How will a prospect see the offer?Show buyers sample labels and ask whether small retail jars or kitchen packs fit their needs.
What must happen before repeating the trial?Use a validated method rather than assuming every fruit behaves alike.

Decide whether to continue

Review the specification with the buyer before committing to tools or stock. A trial is commercially useful only if actual costs, rejected work, time spent and cash collected can be reconciled. Attractive gift presentation cannot create routine repeat use when jars are awkward or fruit texture changes unpredictably between the sample and the purchased batch.

If a buyer changes the required output, record a new scope and re-cost the test. Do not count a request for a different product as proof of demand for the original one. Keep personal contact details in your private records and use customer statements publicly only with permission.

Turn the example into a buyer test

Fictional mango-jam prototype: eighty 250 g jars, twenty kg accepted jam. Costing includes eighteen kg whole mangoes and twelve kg sugar as provisional purchasing quantities, not an approved jam recipe or fruit-content claim. Actual peeled pulp, evaporation, retained samples and rejects must be measured. A qualified food technologist determines the lawful jam identity, formulation, gel, preservation process and storage/date evidence; reduced-sugar claims are outside this example.

Buyer discussionEvidence to retain
Specification to confirmNo jam/fruit-content/low-sugar label is finalized from these cost quantities.
Output to inspectA good gel or popped vacuum lid alone is not safety validation.
Failure that can defeat acceptanceJam fails to set

Ask the buyer to describe one acceptable and one unacceptable result. Record the decision maker, price basis, quantity, handover point and payment date privately. A sample request, an encouraging conversation and an accepted order are different evidence. Keep the first commitment within your demonstrated capacity; no customer interview or successful trial is asserted here.

What a failed test should change

Check actual formulation/measurements with technologist. If the offer cannot meet that check, revise the specification or process before promising a repeat. Keep rejected offers and reasons in the same register as positive replies so that your record does not exaggerate demand.
