Garlic paste production in Kenya: Operations and Quality Checks
Deliver the agreed result consistently
Build garlic paste around a kitchen's use and delivery arrangement within an exact validated formulation, rather than improvising preservation to suit more distant customers.
The operating sequence for this offer is:
- Obtain competent validation for the exact garlic-paste formulation and storage format, approving ingredient suppliers and packaging before production for sale.
- Follow that process while recording garlic input, preparation loss, ingredient weights and batch observations, escalating any deviation instead of guessing corrective treatment.
- Verify the supported handling instructions and lot label, record actual containers filled and keep customer deliveries traceable to the relevant processing batch.
Put acceptance into the job record
Do not assume that garlic in oil or an airtight jar is shelf-stable.
Have cooks assess texture, portion removal and flavour in their usual recipe, while competent support reviews the exact process and packaging independently of taste preference.
Inspect at the point where a correction is still possible, then again at handover. Record rejected or incomplete output separately from accepted output. A completed task is not automatically an accepted task, and an invoice does not establish that the customer received the right result.
Measure real capacity
Time preparation, the main operation, transport, cleaning, approvals and correction as applicable. The slowest stage determines how much you can promise. Where two orders need the same person, space or equipment at the same time, resolve the conflict before confirming both deadlines. An additional enquiry should not erase a commitment already made.
| Operating checkpoint | Evidence for this business |
|---|---|
| Before starting | Build garlic paste around a kitchen's use and delivery arrangement within an exact validated formulation, rather than improvising preservation to suit more distant customers. |
| During delivery | Follow that process while recording garlic input, preparation loss, ingredient weights and batch observations, escalating any deviation instead of guessing corrective treatment. |
| At acceptance | Have cooks assess texture, portion removal and flavour in their usual recipe, while competent support reviews the exact process and packaging independently of taste preference. |
| At the pilot review | Record garlic source, approved formulation reference, peeled yield, packed quantity and buyer feedback, flagging recipe or distribution revisions for competent review before repeat supply. |
Keep a correction and escalation rule
When inputs, access, specifications or customer instructions change, pause the affected work and confirm the effect on time and cost. Do not quietly lower the acceptance standard to avoid a delayed delivery. Keep rework caused by your error distinct from a customer-requested change of scope and agree the remedy clearly.
Adding ingredients or changing containers to reduce cost can create an unreviewed product, so approval of one process cannot justify arbitrary later production changes.
Retain the minimum records needed to investigate a complaint without disclosing unrelated personal information. Use measured delivery and actual acceptance as the basis for expanding capacity, rather than the maximum theoretical output of a tool or production line.
Operating control points for this exact offer
| Sequence | Work method | Release checkpoint |
|---|---|---|
| 1 | Agree peeled-garlic texture and pack size and obtain a qualified process/food-safety and local compliance plan. | No production for sale until actual storage/use-by, handling and release controls exist. |
| 2 | Receive 24 kg identified bulbs and separate unsound cloves during approved preparation. | Mouldy/rotting garlic is rejected rather than trimmed invisibly into paste. |
| 3 | Record peeled usable mass and prepare/grind using approved potable-water/contact-equipment procedures. | Peel/reject mass is weighed; an unrecorded water addition cannot inflate twenty-kg yield. |
| 4 | Fill one hundred 200 g net packs under validated process and required storage control. | Equipment records and pack seals meet the approved plan; refrigeration wording alone is not validation. |
| 5 | Dispatch only cleared packs with batch and approved storage/use instructions to a buyer able to maintain them. | Buyer receipt confirms required conditions; suspect or temperature-deviated product is held for qualified disposition. |
Do not substitute a tick for an observation: record the count, measurement, approved sample or evidence reference used at each checkpoint. Mark unresolved work as held and identify who can approve the recheck.
Diagnose a failure before repeating it
| Observed symptom to investigate | Check the cause | Proposed response |
|---|---|---|
| Paste weighs more than peeled garlic input | Check water/additive entries and scale tare | Hold and resolve undeclared addition or measurement error. |
| Pack swells or leaks | Identify batch and assess under qualified process plan | Quarantine; do not taste-test or repackage for sale. |
| Buyer cannot maintain required conditions | Compare actual transport/receiving capability with validated plan | Do not dispatch until suitable controlled arrangements exist. |
These are diagnostic prompts, not proof of the cause in a real incident. Separate suspect output, record any correction and repeat the relevant acceptance check. Link rejected units, rework time, replacement materials, customer credits and collection delays to the actual job result.
