Mandazi stall in Kenya: Customers and Market Demand

The buyer and the buying decision

Commuters and nearby workers. The offer to test is: Sell mandazi in a consistent size during a defined breakfast window.

Position mandazi around a specific morning queue and an agreed piece size, choosing a compact selling window that makes fresh batches practical.

Separate interest from an accepted order

Trial one permitted morning session and count both sold and leftover pieces.

The purpose of this test is to establish whether the buyer accepts the specified result, delivery arrangement and payment terms. An encouraging interview does not establish repeat demand. Ask what the buyer currently uses, what would make them change supplier and who has authority to approve the first order. Record a refusal as carefully as an enquiry so that unsuccessful offers do not disappear from the evidence.

Collect evidence specific to this offer

Record batch timing, saleable pieces, paid purchases, customer repeat visits and leftovers by time, helping the next session follow actual morning demand more closely.

Question to resolveEvidence to retain
What exactly will the buyer accept?Ask customers to buy and eat ordinary trial pieces, noting texture, portion satisfaction and whether the packaging works when they carry breakfast elsewhere.
What is included in the first trial?Position mandazi around a specific morning queue and an agreed piece size, choosing a compact selling window that makes fresh batches practical.
How will a prospect see the offer?Ask nearby workplaces when breakfast buyers pass and observe the actual route.
What must happen before repeating the trial?Fresh presentation and consistent portions should match the displayed price.

Decide whether to continue

Review the specification with the buyer before committing to tools or stock. A trial is commercially useful only if actual costs, rejected work, time spent and cash collected can be reconciled. The stall can sell well initially yet lose money by continuing production after the main breakfast rush, leaving expensive leftovers that discounts cannot fully recover.

If a buyer changes the required output, record a new scope and re-cost the test. Do not count a request for a different product as proof of demand for the original one. Keep personal contact details in your private records and use customer statements publicly only with permission.

Turn the example into a buyer test

Fictional morning mandazi stall trial: one hundred accepted pieces sold individually during one service, made using a cook-approved batch and five kg mandazi flour purchased. Offer plain mandazi with no milk/egg addition in this example unless the flour label contains relevant ingredients. Piece size is agreed by an actual sample; flour quantity does not guarantee one hundred pieces. Safe cooking, oil management and holding follow a competent food plan.

Buyer discussionEvidence to retain
Specification to confirmMandazi premix is checked for raising ingredients; extra raising agent is not blindly added.
Output to inspectExample 110 produced =100 sold+5 quality holds+5 unsold; held/unsold stock has a food-plan disposition, not automatic next-day sale.
Failure that can defeat acceptanceCentres remain doughy

Ask the buyer to describe one acceptable and one unacceptable result. Record the decision maker, price basis, quantity, handover point and payment date privately. A sample request, an encouraging conversation and an accepted order are different evidence. Keep the first commitment within your demonstrated capacity; no customer interview or successful trial is asserted here.

What a failed test should change

Cook checks portion size and approved cooking controls. If the offer cannot meet that check, revise the specification or process before promising a repeat. Keep rejected offers and reasons in the same register as positive replies so that your record does not exaggerate demand.
